Yogurt parfait recipe with raspberries and chia seeds (serves 2)
Yogurt contains beneficial bacterial strains that can help to reduce bloating, inflammation, and pain. An 8-ounce container of it will also provide you with a dose of calcium, magnesium, and potassium.
In this yogurt parfait recipe, the yogurt is layered with a chia seed mixture. Chia seeds are nutritional powerhouses, packed with fiber – that will keep you feeling full – protein, and omega-3 fatty acids. The seeds are mixed with raspberries for a jam-like consistency here, but feel free to use any ripe summer berry you like for the same effect!
- ½ cup fresh raspberries
- 2 tablespoons chia seeds
- 1 teaspoon maple syrup
- Pinch of cinnamon
- 16-ounces plain yogurt
- Fresh fruit, such as sliced blackberries, nectarines, strawberries, etc.
- Place the raspberries in a small mixing bowl. Using the back of a fork, mash the berries until they reach a jam-like consistency. Add the chia seeds, honey, and cinnamon to the bowl. Continue to mash until all of the ingredients are fully incorporated. Set aside.
- Place a layer of yogurt in the bottom of a medium-size glass or jar. Top with a layer of the raspberry chia mixture. Finish with an additional layer of yogurt. Garnish with fresh sliced fruit and an extra drizzle of maple syrup, if desired. Repeat with the second glass/jar.
