The painful effects of arthritis can be managed through medication and some lifestyle choices. Choosing anti-inflammatory foods can also help keep the pain at bay. Avoiding trans-fats, saturated fats, and refined carbs may alter the effects of arthritis on your body. Replacing these foods with healthier choices such as omega-3 fatty acids found in fish, extra-virgin olive oil, and anti-oxidants will bring these anti-inflammatory properties into your diet.

Pumpkin is one of many ingredients that can help lower the inflammation in your joints if you suffer from arthritis. Here is an amazing angel hair pasta recipe made with roasted pumpkin, sage, and walnuts. You can find the original recipe here.

You will need the following ingredients:

  • Oil spray
  • 1 pound fresh pumpkin cut it into ½ inch cubes to yield about 2 cups
  • Kosher salt
  • 8 ounce package of whole wheat angel hair pasta
  • 1 tablespoon olive oil
  • 1/4 cup fresh, finely sliced sage
  • 2 tablespoons chopped walnuts
  • 1/2 cup fat-free ricotta cheese (room temperature)
  • 1/2 cup fat free, salt free chicken broth (or vegetable broth)
  • Ground black pepper to taste

Preheat your oven to 425ºF. Line a large baking sheet with parchment paper or aluminum foil and spray it with your oil spray.

Place the pumpkin cubes on the baking sheet and spread it out into a single layer so the cubes aren’t touching. Spray the pumpkin and sprinkle with kosher salt. Roast this for 15 to 20 minutes. The pumpkin will begin to soften and turn golden.

Cook and drain the pasta according to the package directions and drain. Keep a cup and a half of the cooking water. You will use this later.

Add the olive oil to a large skillet and heat it on high. Add the sage and stir for 1 to 2 minutes until it turns dark green and crispy. Watch it carefully so it does not burn or brown. Reduce the heat to low and add the pumpkin, pasta, walnuts, ricotta, broth, and 1 cup of the pasta cooking water. Stir the mixture to coat the pasta. Season the dish with salt and pepper to taste and serve immediately.
