Prepare an Awesome Mixed Greens Salad

Add some color to your diet this spring with this refreshing salad and delicious homemade dressing. Share with family and friends, or enjoy alone.

Mixed Greens Salad Ingredients:

  • 1 cup spinach and mixed greens
  • 1/2 cup cherry tomatoes
  • 1/2 cup cucumbers
  • 1/4 cup sliced white onions
  • 1 chicken breast
  • 1 lime

Mixed Greens Salad Directions:

Squeeze lime over chicken breast. Put Chicken on the grill until done. Mix together vegetable ingredients [feel free to add your favorite salad vegetables]. Cut up chicken breast into strips and serve on top of salad. Add avocado dressing [listed below] and serve immediately.

Mixed Greens Salad Dressing Ingredients:

  • 1 ripe avocado , peeled,cored
  • 3/4 cup water
  • 1 teaspoon lime zest
  • 3 tablespoons lime juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 green onions , chopped
  • 1 clove garlic
  • 2 tablespoons light sour cream [optional]

Dressing Directions:

Chop avocado and place in a blender. Add water, lime peel, lime juice, cumin, salt and pepper, green onion, and garlic. Blend away until smooth. Adjust seasoning and serve.
